gaslight coffee roasters.

for someone who is notoriously coffee-phobic (me), a trip to gaslight coffee roasters might seem a bit questionable. but it was time to chaperone an outing for le bébé & his girlfriend, so off to logan square we went for a mommy & baby date.

our friends are kind of gaslight local celebrities. (they go often & the staff all know them!) ... which is why when i was promised the absolute best avocado toast, i knew i was in for a treat.

here's what i had ...

avocado toast :

with kale salad & roasted tomatoes.

i truly don't know how they did it, but this is legitimately the best avocado toast in the world. congrats, gaslight! you did it! but for real ... it's incredible. i think it's the caraway seed mixtures & roasted tomatoes that make it so amazing. plus it's on a bed of kale. what more can you ask for??

as such an avid avocado toast eater ... not sure what i'm going to do moving forward. nothing can compare to this work of culinary art. rest of the universe, you better step up your game. until then, i'll see you at gaslight ... erryday.
