dinkel's.
thanks to my new part-time work schedule, i'm able to take the little munchkin out to lunch & meet people during the week more often ... this happened a couple weeks ago with our friend, mavis. (hi, mavis!) since mavis lives just a bit west of us, we decided to pick somewhere in the middle ... enter dinkel's.
about dinkel's : "through the years & now four generations, many things have remained the same: the standard of quality workmanship, original recipes & the delicious taste of our goods." sounds good, what else?
you may know dinkel's for their donuts. but about a year or so ago (i think?), they expanded & opened up a little cafe attached to their bakery. that's where we went.

spinach artichoke hummus, tomatoes, onions, arugula & artichokes
w/ a balsamic vinaigrette on six grain bread.

maybe a touch heavy on the arugula, but that's my problem. otherwise, this sandwich was perfect! spinach artichoke hummus needs to become a thing everywhere, because it's delicious. (in fact, i may have to make some at home ... hmm.)
what's so great about dinkel's cafe & this sandwich is that it's a permanent fixture on their menu ... meaning, you could walk in at anytime & get a super tasty vegan lunch! we can't partake in any donuts (yet! are you listening, dinkel's?), but a girl can dream, right?
